Your project has appeal and the kind of book you propose really should have been out there a long time ago! Everybody has some experience of dentistry but not a lot of knowledge about the profession or the techniques, in layman’s terms.
In the past, I have rewritten content for a dentistry site so I have some familiarity with the discipline.
It’s difficult to quantify the effort involved for a ghostwriter without seeing your work to date. For example, how many words, on average in each chapter. Typical writing speed can be anywhere from 500 to 1,000 words per hour depending on how much research or head scratching is required!
I have helped with book writing before and it can be slow going.
As regards rates, my standard rate is $25 per hour plus the Freelancer site fee and that reflects the fact that I am a native speaker with business experience. That is towards the top end of the scale for freelance writers on this site. One option you might consider is to cancel the project and create a new one with an hourly rate in the range, say, of $10 to $25. That way, you would obtain more realistic quotes.
Milestones could be set for each completed chapter.
