Payment gateway for a marketplace

Hello, I have a wordpress multi-vendor ecommerce website built with woocommerce and Dokan plugin.

I'm currently using paypal as the default payment but my site is responsible for the paypal transaction fee.

I'll like the sellers to be responsible for the payment gateway transaction fee, while we (the site owners) still charge the sellers commission fee on all purchase

For E.g, When a buyer makes a purchase, we as the primary receiver will take 3.5% of the purchase fee and pass on the entire paypal fees to the secondary receiver (seller),.

We still want to keep holding the sellers money for 'x' number of days before releasing it to the sellers when goods are shipped and recieved/confirmed by the buyer (The site is currently configured this way).

We will like the to be done with stripe or payal. as long as the sellers are responsible for the transaction fee. Like etsy or ebay.
