Sort out my dedicated server hard drives

Hi,
I purchased a dedicated server from Hetzner, and it came with 15 x 4TB hard drives, and a RAID controller...
I installed Windows, but noticed that my C: drive was 2TB max.
I looked at Disk Management, and saw that no other disks were visible, but the remaining 46TB's were available if I was to expand the C: drive.
This wasn't possible due to the clusters being too small??
I wasn't sure what to do, so I tried using MiniTool Partition Wizard to increase the cluster size, and now Windows won't boot.
I'm not bothered about Windows, I can reinstall that - It was a fresh install anyway.
I just want to sort out these hard drives so that I can use all of them.
Ideally, I'd like to keep one drive for the OS (C:\), and the other 14 drives for data (D:\) - Striped?
I haven't used a proper Raid controller before, and my knowledge of Linux Rescue is basically non existent.
Is there anyone that can help me with this?
Thanks
