OSCommerce custumization

I am currently trying outsource a few modifications/additions to an osCommerce site I am developing for a customer. Our only requirements for the work is that we recieve documentation and instructions on the changes. The website goal is to sell popcorn and other related items online.

Additions:

-Address book for users to select who they want to send to

-Gift sending system

--Ability to send a selection of items from the shopping cart to different addresses as a gift

--Ability to write a message that will be delivered with the item and each person

--Ability to choose when the item should arrive

-Easy item entry (Administration)

--Currently a customer chooses the size of a tin (static weight), then what kind of popcorn to fill (variable weight).

--The type(s) of popcorn and weights are static to the three sizes of tins they carry (ie Buttered popcorn weighs less than half buttered and half carmel)

Ability to calculate shipping

-They currently ship by weight to three zones and is determined by state of the person receiving the item.
