Here is how I would approach this project if I were hired: 1) If it's not a table, I would use OCR to get a starting point unless the document is not too long. 2) Read through the pdf/image provided carefully while editing the text generated by OCR to make sure I get every word right. 3) Finally apply formatting to make it look identical to the original right before I do another sanity check. If it's a table, however, I'll see if I can use Python inside KNIME to directly extract the table into an excel workbook, then I'll clean it up to make sure there are no typos and no mistakes before applying proper formatting followed by another sanity check. If you can, I'd love to see a sample before I start; your idea of a small test is the perfect way for you to find out my level and whether I am good enough before you even consider hiring me.
