This is completely doable as it’s a part of my expertise and I’m a professional in transcribing songs by ear. I am aware there are different ways of notation for hand pans. If you want I could use the Louis Standard system of handpan notation. If you also want, I could create an entirely new notation, specific for you where I could combine it with the traditional sheet music while including the hand placement/indications, numbers on top of each note, and the slaps/muted hits/rim hits which will make it extremely easier to read.
