Automate converting scanned .PDF files into .CSV files

I am looking for someone to automate the process of converting scanned .PDF files into .CSV files on a daily basis. The scanned PDF files are of simple text & tables.
I need a recommendation for the software or method to use for the conversion process. Any reliable solution is acceptable.
Ideal skills and experience for this job include:
- Experience with automated PDF to CSV conversion
- Knowledge of different PDF conversion software and methods
- Ability to create a reliable and efficient automated process.
This is what I am thinking for the process.
- We scan all the documents to a folder
- When new documents enter this folder
---OCR occurs on PDF (Or use the built in scanners OCR that makes them into readable PDFs)
- Convert scanned PDFs into CSV files. Place these new files in a folder with today’s date. YYMMDD
-This Folder is then synced with google drive that automatically converts each CSV file into a google sheet format. (Google drive can do this part automatically.)
So in google drive there should be one folder and subfolders for each date. In those folders are the scanned PDFs in google sheet format.
I am thinking you could use python [login to view URL] or [login to view URL] to help.

Eventually we want to be able to use this scanned data to send an email for each scanned document to someone based on information in the document.
