before i start , ESP32 have wifi and Bluetooth and ESP8266 have wifi only ..
i have the ESP8266 and ESP32 , you need to chose one of them of course :) , now i run ESP8266 run it over BLYNK and it work great.
What i want is to have FW for ESP8266 or ESP32 with Arduino IDE or other IDE that can allow me to control the module pins from IOS or android app . how it will work , is that the ESP8266 will have button that when i click it , it will go to accesspoint mode , then after i connect to it from my phone , it will configure from my IOS or android , by normally adding new device to my app , that allow me to enter wifi ssid and password , when i click save , it will connect to server and from IOS app or arduino , i control device pin by toggle high or low ..
if you will use ESP32 rather than ESP8266 , then no need for this step , when i click button , we should see new deivice in bluetooth list , and normally connect to it and configure it from app in phone .
again what is require is the following ,
1- FW for ESP8266 or ESP32 FW
2- ios and android app for configure and control pins
3- server do the flowing :
- when user open the app first time , it require to make account with server ,
- the server will have authentication key for each device I will make manually , and this key will be uniqure for each board of esp32 or esp8266 ... then the esp.. will connect to server over wifi and wait for command from ios app or android app ..
4- the encryption should be done between the devices and server .
the system should be 100% stable without any issue and it will alive and connect to server for days , also the server it self will be stable to allow hunders of this device connect in same time without issues ,
P.S , the datarate will be very small , as it only for toggle pin , nothing else ...

Hi, I would choose ESP8266 and do it as you requested but instead of a native app .. I would make it a webpage as that will allow you to controll it over a laptop for example. Regards Sorin
