The no-data-loss requirement is the part most people get wrong — they flip the MX record before the migration batch is fully synced and end up chasing missing emails. I've done this migration enough times to know the sequence that prevents that. For your setup, Business Standard is almost certainly the right tier — your users will want the desktop Outlook client, not just the web version.
