Raspberry Pi / Arduino Based underwater robot

I am hobbyist, tinkering in many fields. I understand most electrical items fairly easily, my deficiency is in the programming side. I can do basic stuff, however getting into more complex projects, It is extremely difficult to find the knowledge on the topics I am needing to learn.
What I need done, Is a program ( GUI) built that will run on a raspberry PI 4, using a 10 Inch touch screen
( tablet), This needs to be able to take readings from an Arduino uno located within the same box as the raspberry. On the Arduino will be x2 , 2axis joysticks for thruster controls, x2 10k potentiometers to control 2 servo motors in the Robot for a camera pan/ tilt.
In the robot, space will be limited, and am open to any design / hardware changes depending on if all the controls and readings are not affected. It will contain, an raspberry pi, and arduino uno with a robot servo controller expansion board, x4 20amp electronic speed controllers, a Raspberry Pi camera module, x2 micro servos to control pan/ tilt of camera, water detection sensor, x2 temp sensors( one internal and one external water temp) , a pressure transducer to read outside water pressure ( to be scaled to estimate depth of robot underwater)
All data on the robot must be fed back to topside Raspberry to be displayed in a GUI on the touchscreen, Along with live video feed, date displayed will include in a heads up style … Water temp, robot temp (inside), Water detection status inside, Depth, Onboard battery Voltage , Led Lights on/off.
All communication between topside unit and Robot will be done Via a Cat 5/ 6 cable at approximate length of 120-150 FT in length. Battery's will be on board of the Robot, to power electronics and thruster motors and servos.
I am open to design changes as needed, to simplify or make easier, main points are Live video feed, 4 thruster controls, light control, temp readings and depth readings, all in a simple top side Raspberry Pi GUI with on a cat5/6 connection between them.
