Before choosing fiberglass, timber, or a steel-supported build, I'd want to see the two restaurant spaces first. Ceiling height, canopy spread, floor area, and, very practically, how the finished sections get through the entrance will determine the construction as much as the visual design. For the tree itself, I'd avoid the dense, perfectly balanced look that makes large artificial trees feel artificial. A convincing olive tree needs an irregular trunk, natural taper, asymmetric branching, and enough open space through the foliage for it to still feel believable under restaurant lighting. I'd also design the structure in modular sections if access requires it, with the joints hidden naturally through the trunk/branch transitions rather than letting installation dictate the appearance. If both restaurants are different spaces, I’d want to know whether you’re imagining the same signature tree reproduced twice or two site-specific versions of the same concept.
